Below is a recipe I usually make during the holiday season. I have no name for it but it can best described as melt-in-your-mouth pecan balls.
2 cups self-rising flour
2 Tbsp confectioners sugar
1 stick butter
1 tbsp water.
1 cup pecans
2 tsp vanilla
Mix sugar and flour.
Cream butter. It is easier if the butter has been out of the fridge a little while.
Gradually add butter to sugar and flour mix.
Fold in pecans
Add vanilla and water, mix.
You should have a soft dough that you can shape into small balls.
Put on cookie sheet and cook on middle rack in oven at 275 until done. Around 30 minutes. While pecan balls are warm, roll each one in confectioners sugar and serve.
