Winter is definitely a good time for shelling and toasting pecans. I do love pecans, but not the trees. At one time, I had several pecan trees in my yard but they have been cut down. There are still a couple in the woods behind my house. They do produce pecans which the squirrels always get first and tree limbs are always falling off the pecan trees. So I buy my pecans at the story. I buy them shelled because shelling pecans is not my thing either.
Here's a quick recipe for toasting pecans:
6 cups of pecans
1/8 cup of butter
salt
Spread pecans in a baking pan. Toast at 250 degrees for about 30 minutes. Slice butter into thin slices. Remove pecans and put slices of butter over all of the pecans in the pan. Stir until butter is melted and mixed with pecans until pecans are greasy. Salt. Toast pecans one hour. Salting and stirring every 15 minutes or so. Pecans are done when all the butter is absorbed and the pecans are crisp. Enjoy!
